Count Dooku was a Jedi Master who fell to the dark side of the Force and became a Dark Lord of the Sith, known as Darth Tyranus. A bust of him can be seen in the Jedi Archives library.
Aurra Sing is a bounty hunter seen briefly during the Bounta Eve Pod Race on Tatooine.
